What is Vegan Carbonara Made Of?

Traditional carbonara is made with bacon or pancetta and an egg sauce poured over the top. However, in this vegan version, we replace the bacon with mushrooms and create an 'eggy' sauce using our vegan tofu scramble recipe. The sauce is made with raw cashews, nutritional yeast, turmeric, dijon mustard, garlic powder, onion powder, black salt (kala namak), and non-dairy milk. The black salt adds an egg-like flavor to the sauce, while the turmeric gives it a vibrant color.

To make the dish, start by cooking your spaghetti according to the package instructions. While the pasta is cooking, melt vegan butter in a pan and add sliced mushrooms, crushed garlic, and smoked paprika. Cook until the mushrooms are softened. Once the spaghetti is cooked, add it to the pan with the mushrooms and toss everything together. Pour in the blended sauce, add sea salt and black pepper to taste, and toss until everything is coated and heated through. Serve with chopped parsley and a sprinkle of black pepper for added freshness and flavor.

Ingredient Notes

Black salt, also known as kala namak, is an essential ingredient in this recipe as it provides the distinct 'egg' flavor. If you don't have black salt, regular salt can be used as a substitute. Turmeric is used for color and can be omitted if desired. Any non-dairy milk can be used, such as soy milk or almond milk. As for the mushrooms, we recommend using large flat brown mushrooms, but button mushrooms or cremini mushrooms will work well too.

Make it Gluten-Free

If you follow a gluten-free diet, you can easily make this dish gluten-free by using gluten-free spaghetti instead of regular spaghetti. This simple swap allows those with gluten sensitivities or allergies to enjoy this delicious meal.

Storing Tips

If you have leftovers, store them in the fridge and enjoy within a few days. You can easily reheat the dish in the microwave for a quick and convenient meal.
