Agave:

The agave used in Maestro Dobel comes from the volcanic lowlands of Jalisco, Mexico. Harvested between March and July, when the soil is dry and the agave has reached full maturity, these agave plants offer the greatest concentration of sugars and essence in their flavor.

Cooking:

The piñas, or hearts, of the agave plants are cooked in traditional masonry ovens using direct steam-heat for 36 hours. After cooking, the piñas are left in the sealed ovens for an additional 12 hours without any steam, allowing them to air-cool naturally.

Fermentation:

The cooked agave goes through a milling process with four mills, and the juice, or mosto, is slowly fermented for up to 72 hours. Maestro Dobel uses a specially selected yeast that is harvested and developed from the concentrated juice in their quality control laboratory.

Water:

The water used in the production of Maestro Dobel is extracted from natural springs fed by underground currents originating from the Tequila Volcano. This pristine water source contributes to the unique character of the tequila.
